Stewed quinces

Ingredients

  • 1 kg of quinces
  • 550 g of mutton or beef
  • 3 onions
  • 100 g of vegetable oil
  • Salt
  • Spices
  • Fresh greens to taste

Directions

Cut fatty meat into small pieces and mix with sliced onions, salt, spices, and fresh greens. Pare, core, and quarter quinces. On the bottom of a large pot place meat mixture and cover with layer of quinces. Add a touch of water, cover tightly, and cook on low heat 45-50 minutes without stirring. Garnish with chopped green onions or fresh coriander.
